White cabbage is a traditional filling for homemade pies. It will be delicious even if you just stew it in milk, but adding other ingredients to such a filling will allow you to bake cabbage pies with different flavors every time.

Cabbage filling with eggs

To make a delicious cabbage and egg pie, you will need:

  • 1 small head of cabbage
  • 3 large bulbs
  • 5 pcs. eggs
  • ΒΌ tsp granulated sugar
  • 1 Χ˜Χ‘Χ‘Χ€ΦΌ Χ€ΦΌΧ•Χ˜Χ’Χ¨

Peel the onion, cut each onion in half and cut into thin half rings. Heat vegetable oil in a frying pan with high sides, add butter to it, put onion, lightly salt it and sprinkle with sugar. Simmer, stirring constantly, over medium heat until transparent.

Cut the cabbage into thin strips and then into 2–3 cm pieces. Put it in a saucepan, cover with boiling water, place on the stove and bring to a boil. Add salt, reduce heat and simmer for 5-6 minutes. Drain the cabbage in a colander and rinse it in running cold water.

Put the cabbage in the skillet, where the onions are stewed, in portions, squeezing each one well with your hand. Stir the cabbage with the onion, lightly simmer everything together for 2-3 minutes. Remove the pan from the stove, transfer the contents to a bowl and cool.

Boil hard boiled eggs. Finely chop eggs, fresh herbs and green onions, put in a bowl, stir with cabbage. Season with salt and pepper if necessary. The cabbage filling is ready.

To make the pie more satisfying, you can add minced meat fried with onions to the cabbage filling or in a separate layer

Filling for pies with mushrooms and cabbage

For this filling, take:

Dry mushrooms must be soaked in boiling water in advance, so that they become soft, they need to stand for at least 3-4 hours. Do not add a lot of water, it should only cover the mushrooms. Drain the infusion from them, but do not pour it out. Finely chop the onion, grate the carrots on a coarse grater. Heat olive oil in a frying pan, fry the onion in it until golden brown. Add carrots and blanch for 3-4 minutes. Put the soaked and finely chopped mushrooms in a skillet, salt, pepper and fry a little all together.

Put finely chopped or chopped cabbage in a deep bowl and pour over boiling water. Place the cabbage in a colander and drain. Put it in a frying pan, mix with mushrooms, onions and carrots, add mushroom infusion, butter, salt and pepper to taste. Simmer, stirring occasionally, over medium heat for 15 minutes. Cool it down before putting the filling into the pie.
