Put tomatoes, chopped basil, olives cut into rings in the hot pasta, stir, put on wide warmed-up plates and top with cheese cut into wide shavings with a special knife.

Amatricano pasta is a classic of Italian cuisine. It includes not only tomatoes and cheese, but also smoked pork belly – pancetta, as well as hot chili peppers. You will need: – 2 tablespoons of vegetable oil; – 15 g of butter; – 1 medium head of onions; – 100 g of pancetta; – 400 g of canned cherry tomatoes; – 1 hot red chili; – 3 tablespoons of grated parmesan; – 450 g of spaghetti; – salt and pepper.

Melt the butter in a wide heavy-bottomed saucepan, pour in the olive oil, heat them. Cut the onions into small cubes, fry them until transparent. Cut off the stalk of the pepper and carefully clean the seeds, if you like very spicy dishes, you can leave them. Slice the chili into thin rings. Cut the pancetta into long thin slices. Fry them for 1 minute, add the tomatoes, the chili peppers, and simmer uncovered for about 25 minutes. Season with salt and pepper. Toss the sauce with hot pasta and grated cheese. Serve hot.
