Pumpkin is a vegetable rich in vitamins, trace elements and fiber. Nutritionists strongly advise to include pumpkin in the menu more often – to cook cereals, soups, side dishes and salads. For the latter, you can use a baked or raw vegetable; unusual taste and pleasant texture of pumpkin pulp will pleasantly diversify your table.

Healthy food: fresh pumpkin and apple salad

This salad can be served as a light snack or a healthy dessert. Vary the sweetness of the dish according to your own taste; the amount of sugar indicated in the recipe can be increased.

You will need: – 200 g of pumpkin pulp; – 200 g of sweet apples; – a handful of peeled walnuts; – 0,5 cups of red currant juice; – 1 teaspoon of brown sugar.

Squeeze red currant juice. Peel the apples from skin and seeds and chop very finely. Grate the pumpkin on a coarse grater. Put the prepared ingredients in a deep salad bowl, cover with currant juice and sprinkle with brown sugar. If desired, the dish can be decorated with fresh mint leaves.

Spicy pumpkin and radish salad

You will need: – 250 g of peeled pumpkin; – 200 g of green radish; – 150 g of carrots; – ¾ glass of sour cream; – salt; – freshly ground black pepper.

Peel the carrots and radish. Grate all vegetables on a coarse grater and arrange on a platter in three heaps – yellow, light green and orange. Place a deep bowl of sour cream in the center, pre-seasoned with salt and pepper. Garnish with fresh parsley sprigs.

Pumpkin salad with celery

You will need: – 200 g of pumpkin; – 100 g of celery root; – 150 g of carrots; – 1 clove of garlic; – 4 tablespoons of olive oil; – greens of celery; – salt; – freshly ground black pepper; – 1 teaspoon of mustard; – 1 teaspoon lemon juice

Bake the pumpkin pulp in the oven, chill and cut into cubes. Chop the celery root into very thin strips or grate. Slice carrots in the same way. Place vegetables in a deep salad bowl.

In a bowl, combine olive oil, mustard, lemon juice, salt and ground black pepper. Pour the sauce over the salad and sprinkle with finely chopped celery.

Dried white bread croutons can be added to the salad. Serve them separately or sprinkle on them just before serving.

You will need: – 300 g of pumpkin pulp; – 130 g of natural yogurt; – 2 fresh cucumbers; – 1 lemon; – salt; – 0,5 cups of peeled walnuts; – honey; – 200 g of squid fillet; – 3 apples. Pumpkin and cut the pre-washed squid fillets into strips. Place the food separately in deep containers and pour boiling water over them so that the water completely covers them. Leave it on for 20-25 minutes.

Peel the apples, cut into thin cubes and sprinkle with lemon juice so as not to darken. Chop the cucumbers into strips. Place cucumbers and apples in a salad bowl, add pumpkin and squid, salt to taste and stir.

Thinly chop the lemon zest, coarsely chop the walnuts with a knife. In the bowl of a food processor, combine the zest, nuts, lemon juice, and honey. Pour the resulting sauce over the salad and serve.
